Kelp Hot Potatoes
Serves 4
Ingredients
3 Tbsp soy sauce
1 Tbsp honey
6 potatoes (white or sweet)
2 ½ to 3 Tbsp olive oil
1 cup tightly packed kelp (about 1 ounce), lightly rinsed
1 cup water
Method
1. Combine the soy sauce and honey in a small bowl. Mix well and set aside.
2. Cut the potatoes into bite–size pieces, and sauté in the oil until golden, stirring often.
3. Cut the kelp into pieces approximately 1 inch long, and add to potatoes.
4. Add the soy–honey mixture and stir thoroughly. Add the water, cover, and simmer for 15 to 20 minutes.
