Laver Mushroom Tofu Scramble

Serves 3–4


¼ package (¼ oz) laver
1 medium onion, diced
1 tsp to 1 Tbsp sesame or olive oil
1 lb firm or extra firm tofu, drained and mashed
1–2 cloves garlic, diced very small
One 4 oz package fresh shiitake, ½ cup dried shitake, or 1 cup chopped regular mushrooms
Freshly ground black pepper to taste
½ tsp to 1 tsp ginger, diced very small
Optional: 1 bunch watercress or 8 oz spinach, chopped


1. Pull apart laver. Crisp in a frying pan over medium heat 4 to 5 minutes, pressing occasionally with spatula or spoon until crumbly. Or set in a toaster oven for 5 to 8 minutes at 300° F. Watch carefully and don't burn the Laver! Set aside.

2. Sauté onion in lightly oiled pan until translucent.

3. Add the tofu, garlic and mushrooms and sauté until the tofu has lost excess water.

4. Crumble laver and mix into the pan.

5. Add tamari and pepper to taste.

6. Mix in optional greens and/or ginger.


1. Add sliced red bell pepper, and/or grated carrot, for more color and a fuller dish.

2. You can also add more garlic, ginger, and other types of mushrooms — white button, crimini, portobello, or oyster.
