Waldorf Salad with Dulse

Serves 6

Ingredients

1 head red leaf lettuce, chopped or broken into pieces
1 cup chopped dulse
2 apples cut into chunks (2 cups)
3 grated carrots
1 cup chopped celery
½ cup chopped roasted pecans, or ½ cup walnuts
¼ cup raisins (optional)

Asian–Style Dressing

½ cup soy mayonnaise
2 Tbsp brown rice vinegar
1 tsp umeboshi paste

Western–Style Dressing

2/3 cup salad oil
Juice of 1 lemon
4 Tbsp soy sauce

Method

1. Combine all the salad ingredients.

2. Whisk together the dressing ingredients, and mix gently into the salad.

3. Allow the salad to marinate for 20 minutes before serving to allow the dulse to absorb moisture and soften.

4. Note: If the salad must be served immediately, lightly rinse the dulse after cutting it.
