Dulse Chickpea Salad

Serves 4–6

Ingredients

1 large whole–wheat pita bread, or corn or other whole grain tortilla, ripped into small pieces
1 ½ cups cooked chickpeas
1 cup chopped dulse sea vegetable
1 cucumber, peeled and diced
1 tomato, diced
½ cup chopped black olives
¼ cup lemon juice
½ cup parsley or cilantro
2 cloves garlic, grated
1/8 to ¼ cup olive oil
½ cup sliced or diced Vidalia onion
1 cup chopped romaine or leaf lettuce

Method

Preheat the oven or toaster oven to 400° F.

Bake the pita bread for 5 minutes.

Put in a large mixing bowl with the rest of the ingredients, stir well, and serve.
