Carrot Dulse Salad

Adapted from Conscious Eating by Gabriel Cousens, M.D.

Ingredients

Dressing

2 Tbsp raw tahini
½ cup water
1 tsp freshly grated ginger
juice of ½ lemon (if acid)
2 Tbsp raw apple cider vinegar (if alkaline)
1 clove garlic
3/4 tsp mellow miso

Salad

½ oz dulse (about ½ cup), lightly soaked and chopped
¼ cup raisins, soaked
½ cup walnuts
2 carrots, grated
tahini ginger dressing

Method for dressing

1. Blend liquid ingredients and the ginger first for 30 seconds, then add the remainder.

2. Blend 'til smooth.

For the salad

1. Mix all the ingredients and add the tahini ginger dressing.
