FLAVOR CHARACTERISTICS

  • Uncooked: nutty, "eggy," slightly sweet, slightly "salty"
  • Cooked: mildly marine, nutty, "eggy"

PHYSICAL CHARACTERISTICS

  • Raw: 1/16 inch diameter flakes mixed with some powder, silver green tint
  • Cooked: dissolves immediately, green-black color, thickens slightly
  • Hydration capacity: flakes hold 9.4 times their dry weight in water
  • Flakes almost double in size when fully hydrated

COMBINATIONS

  • Complimentary: grains, mild flavored vegetables, potatoes, mushrooms, tofu, eggs, cream cheese, popcorn, delicate flavored seafood, mild culinary herbs such as thyme, some spices such as ginger
  • Uncomplimentary: beans and other legumes, all strong flavors

SUBSTITUTIONS

  • Replace salt in some lightly salted sauces, soupstock or snacks (popcorn)

PREPARATION and USAGE

  • No preparation necessary
  • Season any salad or add to any dressing for flavor and color
  • Garnish any fish, egg, tofu, or mushroom or pasta dish
  • Make instant, nutritious broth with one part nori flakes to 6 parts water
  • 1 part water to 1 part nori flakes makes a tasty deep green spread or paté
  • Add a nutty, "eggy" flavor to any pie or quiche crust, tart or breading mix
  • Use in pancakes, potato pancakes, fritters as flavorful nutritious binder

May replace dulse flakes in some recipes.
