Tofu Scramble with Dulse Flakes
Serves 4
Ingredients
4–6 scallions, chopped, (reserve green parts), or one small onion, chopped
6–8 medium mushrooms, sliced
6–8 parsley stalks, diced
One pound tofu, firm or extra firm, well drained
5 heaping tsp nutritional yeast
2 Tbsp dulse flakes
1 tsp tamari
Black pepper
Method
1. Sauté scallions (white part) 3 to 5 minutes until transparent.
2. Add mushrooms and sauté another 2 minutes.
3. Mash or crumble tofu into frying pan. Cook until hot and steaming.
4. Mix in nutritional yeast, dulse flakes, scallion greens and parsley.
5. Sprinkle on black pepper and 1 tsp tamari.
Optional
Add ½ tsp turmeric for yellow "scrambled egg" color.
