Candied Kelp
Serves 4
Ingredients
Two to three 5" strips of kelp
¼ cup honey
½ cup water
Approximately 1 cup sesame seeds
Method
1. Soak the kelp in water until it is very soft. Cut it into desired shapes, enough to fill ½ cup.
2. Bring the honey and water to a boil. Reduce the heat, add the kelp, and simmer uncovered until almost all of the liquid is gone (1 to 1 ½ hours). Check frequently, adding a dash of water when needed, and stirring occasionally.
3. Preheat the oven to 300° F. Arrange the kelp pieces on the sesame seeds, turning to coat both sides. (Try using chopsticks for this.)
4. Bake on a clean cookie sheet at 300° F for 25 to 30 minutes. Halfway through baking, turn over the pieces, and be careful not to scorch the sesame seeds!

Options
Try some maple syrup, barley malt, or rice syrup mixed with the honey. You can substitute ground almonds, pecans, walnuts, or peanuts for the sesame seeds.
