Carrot and Parsnip Salad with Smoked Dulse
Serves 10
Ingredients
2 cups grated carrots
2 cups grated parsnips
¾ cup finely diced celery (1 or 2 stalks)
1 Tbsp minced red onion
2 Tbsp smoked dulse, toasted and crumbled
2 tsp apple cider vinegar
2 tsp prepared mustard
1 Tbsp chopped parsley
2 Tbsp sunflower seeds
Method
1. Combine all the ingredients, mix well, and season to taste.
